Access: Deny

I am trying to deny access to all projects but one. It has been suggested here that one way to do this is to use Access:Deny for specfic projects. When I add this for a project, it does not display in the permissions table at the bottom left. I understand that it is not a permission, but how are you going to keep track of what you've denied if you can't see it? Also, it doesn't seem to be working anyway. Am I doing something wrong? If I were doing it correctly, would it show up as an Access: Deny in the permissions table?
